Elderflower Cordial

On our allowed one hour exercise walks, we are looking out for elderflower bushes ready to gather a few flower heads for making cordial. Here is the recipe which makes about two litres and is diluted one to 10 for using. Ingredients:

  • 20 elderflower heads – pink or cream
  • 1.5 litres water
  • 1.8kg sugar
  • 70g citric acid
  • half a campden tablet

Pick elderflower heads on a dry day if possible; shake off any insects and rinse.
Boil water, remove from heat, add sugar, citric acid and elderflowers (on stems). Stir to dissolve sugar. Cover and leave to stand for five days in a cool place, stirring twice daily.
After five days, strain through muslin, crush campden tablet and mix with a little water. Add and stir in (to help cordial keep well and avoid fermentation).
Pour into sterilised bottles and seal with a tight fitting top (screw top wine bottles work well). Label. Ready for use! Enjoy!
Store in a cool dark place; should keep at least a year.
